Lentil & Mango Tacos
These vibrant Lentil & Mango Tacos are a delicious fusion of plant-powered protein and antioxidant-rich ingredients, designed to nourish and protect your body from oxidative stress.

2 Corn tortilla
¼ cup Lentils
½ Cucumber
4 Cherry tomatoes
¼ Red onion
¼ cup mango
½ Avocado
¼ cup Red cabbage
2 tbsp Corn
1 tbsp Cilantro
1 tbsp Lime juice
Cilantro Cashew Sauce
1 cup cashews
2 tbsp nutritional yeast
1 clove garlic
¼ cup cilantro
1 tsp Himalayan Sea Salt
1 cup Water

Start by rinsing and cooking the lentils for about 15 minutes or according to package instructions.
Clean and chop veggies: cucumber, tomatoes, red onion, mango, avocado, red cabbage and cilantro.
Heat the tortillas in a hot skillet. Spread some Cilantro Cashew Sauce and fill the prepared ingredients. Squeeze on some more lime, sprinkle with corn, chopped cilantro leaves and serve warm.

Cilantro Cashew Sauce
Soak the cashews in warm water for minimum 15 minutes
Add the soaked cashews with the rest of the ingredients in a blender or food processor and blend until smooth and creamy.
